“Fem Christmas pudding ”

LA RECEPTA
To make pudding we need:
INGREDIENTS
  • 450 (four hundred and fifty) grams of mixed dried fruits, such as figs, apricots, sour cherries, raisins, dates, cranberries or sultanas.
  • 75 (seventy-five) millilitres of brandy or whisky.
  • 1 orange.
  • 120 (a hundred and twenty) grams of butter.
  • 120 (a hundred and twenty) grams of brown sugar.
  • 2 eggs.
  • 50 (fifty) grams of self-raising flour.
  • 50 (fifty) grams of fresh breadcrumbs.
  • 50 (fifty) grams of nuts (almonds, hazelnuts,…)
  • ½ (half)a teaspoon of nutmeg.
  • ½ (half)a teaspoon of cinnamon.
  • A coin.

EQUIPMENT
  • Two large bowls
  • A grater
  • A squeezer
  • A brush
  • One teaspoon
  • Parchment paper
  • An electric mixer
  • A spatula
  • String
INSTRUCTIONS
  • Cut the large pieces of apricot o fig. So that all fruit pieces are the same size.
  • Put the dried fruit in a large bowl and pour over the brandy or whisky.
  • Grate the zest of the orange and add to the bowl of fruit.
  • Juice the orange and pour the juice over the fruit.
  • Mix the fruit and juice together well.
  • Cover and leave in a cool place overnight.

The next day

  • Lightly butter a pudding basin with melted butter.
  • Place a disc of paper into the base.
  • In a large bowl, cream the butter with the sugar with an electric mixer for five minutes.
  • Beat in the eggs, a little at a time.
  • Add the soaked fruit and stir well.
  • Add the flour and the breadcrumbs to the mixture.
  • Add the nuts and spices and mix well.
  • Spoon the mixture into the pudding basin.
  • Cover with paper.
  • Tie the top with string.
  • Steam the pudding for 4 hours …
  • OR Cook it in a microwave for 30 minutes.
  • You can eat the pudding at this stage …
  • OR you can store it for 2 or 3 months, in a cool dark place.
  • Askan adult to flame the brandy and pour over the pudding …
  • Finally serve with custard.
