This recipe is a typical
Christmas Russian Candy, which is usually only eaten in Christmas.
It's very sweet and tastes fruity
Ingredients · 13 large Quince
· 2 Lemons
· 2 cup Water
· 2 cup Sugar
· 1 cup Lemon juice -- strained
Steps
1. Select desired number of quince. Wash and peel as you would an
apple.
2. Use a shredder and grate it on largest holes.
3. Place all the meat in a heavy pot with the juice of 2 lemons
and 2 cups of water.
4. Cook it at low heat for at least an hour or an hour and a half.
Test to see if the quince is soft. Remove from fire.
5. Measure the cooked quince by cup and return to pot. Add equal
number of quince and sugar in the same pot.
6. Stir well until blended. Cook on medium heat, watching carefully
that it doesn't burn.
7. Reduce heat to the lowest setting for an hour, stirring frequently.
After the first half hour add 1 cup of strained lemon juice.
8. Test the quince by placing a teaspoonful on a small plate. If
it doesn't run, it's ready to pour on a baking dish about 1/4 inches
thick. Let it dry for 3 days.
9. Cut it in smaller pieces to help to bend. When hardened, wrap
and refrigerate until used.
