We think that the Forum 2004 is a way of knowing
all the cultures of the world. We contribute in this significant
event with different recipes from the world. We have chosen the
one we like most, fried rice with coconut, from Colombia.
We think that Colombian food is one of the most exquisite in South
America. Ingredients:
1 coconut
2 spoonfuls of sugar
400 g of rice
Grapes
Preparation:
Empty the water of the coconut and add lukewarm water to complete
a cup.
Grate the coconut, add the water, squeeze with the hand and squeeze
it on a colander to extract the first milk of the coconut. Keep
it. Continue adding more lukewarm water to the grated coconut and
repeat the operation to obtain 3 cups of milk.
In a medium pot, mix the first cup of milk with the sugar and cook
with average fire until it takes a golden colour.
Add the remaining milk and stir constantly.
Add the salt and the rice, mix. Cook with high fire until it begins
to boil, reduce the fire and continue cooking until little bubbles
are observed on the surface.
Add the grapes in this moment.
Cover the pot and cook until it dries and the rice is cooked.
