Escudella

Ingredients

For the soup

500 gr beef , 1/4 chicken, 200g ear and ½ pork foot, 1 bone of dry ham, 1 bone of females calf’s knee, 150g white sausage, 250g potatoes, 1 green cabbage, 1 turnip, 1 carrot, 1 parsnip, 1 leek, a little of celery

For the meatball

150g of minced meat, 100g bacon, 1 egg; a little bread with milk, 1 onion, parsley, salt, cinnamon, flour

Preparation

4l. of water to boil, add the meat for 1/2hours. Add the vegetables, boil for1h 30 min. Add the cabbage, the potatoes, and the “ ball “. 30min.

Strain the broth and prepare the soup. 12 to 15 min

With the soup, add the vegetables and the other meats.

Crema Catalana

Ingredients

1 l. of milk, 12 eggs, 200 g. of sugar, 2 spoons of flour, 1 twigs of cinnamon lemon skin

Preparation

In a saucepan put the milk, mix all the ingredients, when the milk is hot, add all the ingredients. Wait till it boils . Put in dishes or glasses, put sugar or cinnamon on it.

Sanfaina

Ingredients

1 small cauliflower, 200 gr. of fresh mushrooms, 1 eggplant, 2 onions, 1 garlic

1/2 cup of chickpeas or beans, salt, 1 sweet pepper, 1 glass of oil

Preparation

After washing all the vegetables carefully, cut them into pieces, the chickpeas are boiled (that will already be soaked from the day before).

Heat the oil in a pan, toss onions and chopped garlics and braised for a moment; then, apadir the eggplant and the pepper, to continue braising during ten minutes more and add a small cauliflower, mushrooms, chopped onions, cooked chickpeas and salt.

Cook everything slowly, for forty minutes.

Andalusian Gazpacho by Almudena Moreno Arriaza

Ingredients

250 g of tomatoes
30 g of green pepper
20 g of cucumber
¼ onion
¼ garlic clove
2 slices of bread
1 spoonful of olive oil
1 teaspoonful of vinegar of white wine
50 ml of water
Sal
Ground pepper
A droplets of it oils of olive (the last touch)

Preparation

1-Cut tomato
2-Cut pepper
3-Cut onion
4-Cut cucumber
5-Cut garlic
6-Cut bread
7-Dip bread
8-Mix the ingredients in a bowl
9-Beat with mixer
10-Drain and cool
11-Serve and put oil above
NOTE: After, you can put cucumber, ham or hard-boiled egg above.

Origin

Gazpacho andaluz is typical from Andalucía (Spain), normally people eats it in summer because t'is very refreshing and very good.

Yes, because this plate contains nutrients, as lipids,proteins and mineral salts.

 


Spanish omelette

Ingredients

Preparation

Cut the potatoes. Put in a pan some oil. When the oil is hot, put the potatoes; when they are cooked, mix the potatoes with the onion (also cooked) and the scrambled eggs. Cook for 15 minutes.


Paella (seafood)

Ingredients

Rice, red pepper, garlic, onion, tomatoes, parsley, clams, mussels, large prawns, cuttlefish, salt, oil, branch of saffron and some peas.

Preparation

First, boil clams and mussels, and put oil into the frying pan.
Then, sightly fry the red pepper, onion, garlic and parsley. Put the cuttlefish and natural tomatoes.
After that, add the rice with the other ingredients and add two water glasses for each rice glass that you put. Then, boil at fast fire during ten minutes, and add shellfish.
Finally, get the fire down during ten minutes more, put some peas and leave it rest during five minutes and... we can eat it!!


Broad beans Catalan style

Ingredients

1800 Kg. of broad beans, 600 g. of pork fat, 600 g. of black sausages, 2 onions, 5 tomatoes, 100 g. butter, 1/2 of glass of anisette, 3 cloves of garlic, bay leaves, fennel, mint , salt , pepper

Preparation

Cut the pork fat in three pieces and put in a casserole with the butter.

Later cut the garlic with onion and put to fry with mint, bay leaves and the fennel.

When the garlic and onion are ready, add the tomatoes and broad beans and later add a glass of anisette and the black sausages and put to boil. For finish move the mint and add the pepper and salt


Spring onions (Calçots)

Ingredients for the sauce

One small glass of oil, 40 g of hazelnuts, 100 g almonds, a bit of vinegar, 2 peppers, 1 dry pepper, 1 big glass of tomato sauce, several cloves of garlic

Preparation

Mix the ingredients for the sauce. Dip the spring roasted onions in the sauce and eat them.

Spinachs omelette by Silvia Tejero

Ingredients

2 eggs/person, fresh spinachs and then, boiled, a little bit of salt, a little bit of wild marjoram

Preparation

First put two eggs in a bowl and beat them.
Add a little bit of salt, a little bit of wild marjoram and the spinachs to the beaten eggs and mix all the ingredients.
Pour it all in a pan, with a little bit of oil, and cook it.

Origin
This is a recipe my grandmother made when it was Holy Friday in Andalucia.


Is it healthy?
I think that it is a healthy meal, because spinachs are rich in fibre and the doctors recommend to eat two eggs a week.

Cod fritter by Josep Mª Granados

Ingredients

Water, flour, eggs, garlics, chives /onion, cot, parsley, bicarbonat, salt and oil.

Preparation
Put the cod in the water the night before. Throw the water and chop the cod, take out the skin and thorns.Take a big dish and mix the cod with the egg, flour, water, bicarbonat and a litttle salt. Stir well, put on chives, parsley and finely chopped garlics. Take a fork and stir until it's a soft thick mass. Frit the spoon of mass with very hot oil, until it is brown. Dry it with kitchen paper.
Origin
The Arabs brought the cod fritters. They are a specialty of Mediterranean countries (including Spain, Italy, France and Portugal). In Catalonia and Portugal they are very popular, they don't contain chilli and They're usually fried in olive oil. It is typically eaten in various fried dishes or dishes as garnishing.

Ingredients

1 Kg. meat crest (neutered goat), 2 / 4 parts olive oil, 2 / 4 parts wine vinegar, Garlic, Parsley, Bay, Oregano, Paprika, Sal

Preparation

Put it all together to marinate 24 hours before baking. Put the saucepan over low heat to reduce the vinegar and cook the meat. Salt it and now we can eat it.
We recommend using the crest at room temperature and eating the day after it is baked.

La fritada by Berta Díaz

Ingredients

Rabbit, Tomato, Onion, Pepper, Potatoes, Parsley, Pumpkin, Salt, Cumin, Garlic, Almonds, Bread

Preparation

We put oil in a skillet and put it on the stove. We fry the potatoes (pre-peeled and cut) with the pumpkin, peeled and cut too, and with the pepper. We add salt and leave it at medium heat.
As the pumpkin and the potatoes fry, we prepare a paste with the cumin, garlic, almonds, fried bread and water.
We pour this mashed over the potatoes, pumpkin and peppers fried. We stir it a bit and rest a moment.

This dish is originally from Huénaja, Granada. There, they do it for Christmas or for Holy Week

Ingredients

50 ml. vinegar
100 ml. olive oil
A handful of salt
A piece of bread crumbs.
A clove of garlic.
Half a kilo of ripe tomatoes drained.
* Can be accompanied by: Boiled egg, Ham minced

Preparation

Beat All (vinegar + olive oil + salt + few cloves) until it is creamy. (Add bread to thicken, add tomatoes to clarify).

Finally, put pieces of ham and egg on top.

Ingredients

Preparation

Roll pieces of ham to pork loin with a few drops of lemon coated in breadcrumbs and (then fried). It can be served with potatoes, mayonnaise and lettuce.
